We also are installing a 3 camera dash cam system + gps. Our plan is to put the dash cam and our driver's phone on a separate network that takes priority over the guest network and does t throttle bandwidth.I flashed with OpenWRT. I actually just used this same setup on vacation last week. I used a TP-Link WiFi Extender to connect to wifi, and plugged the lan from extender to my wan of a pfsense travel router. The provided wifi speed was only 50mb, and with the TPLink to pfsense, my speedtest consistently hit 44.UDM Pro SE has 2,5Gbps WAN port and the PoE in it (PoE+ x2 ports, 6xPoe) is just a plus, including the built in ssd for protect, should you need it. No reason to not get it for future proofer system. But you're still going to want to get that PoE switch.
